Vinification
Overripe harvest towards the end of  September. Destemming of the grapes. Maceration and fermentation at controlled temperature for 12/13 days, in vertical vats. Drawing off, pressing and decanting in tanks of stainless steel.

Description
Ruby red with purplish reflections. Intense, spicy, with pleasant hints of red berries, blackberries and blackcurrant. Dry, full-bodied and soft on the palate.

Food Pairing
A perfect companion for red meat and mature cheeses.
